You could say that this is a fresher version of tacos. Fresh vegetables are placed in rice paper, which is then folded and dipped in dressing and a soy mayo. It doesn't get any better than that!
Ingredients

- 4 port rice (preferably whole grain)
- 1 lime
- 2 tbsp Japanese soy
- 1 tsp sambal oelek
- 1/2 tbsp sesame seeds
- 1 tbsp oil
- 1 dl mayonnaise
- 1/2 tbsp Japanese soy
- 380 g silk tofu
- 1/2 cucumber
- about 200 g red cabbage
- 2 avocados
- 4 green onions
- 1 pack coriander (each 20 g)
- 12 sheets of rice paper

Follow the steps from top to bottom while you cook.

Cook the rice according to the instructions on the package.

Dressing: Squeeze the juice from the lime and mix it with soy, sambal, sesame seeds and oil.

Soy mayonnaise: Mix the mayonnaise with the soy.

Spring rolls: Cut the tofu and cucumber into sticks.

Slice the red cabbage thinly, preferably with a mandolin or cheese grater.

Split, core and pit the avocados.

Slice it and the green onion.

Drizzle some dressing over the tofu and mix all the vegetables with the rest of the dressing.

Pick the coriander leaves and put them in a bowl.

At the table: Place a large bowl of lukewarm water on the table.

Everyone dips their own rice paper into the water for 10-15 seconds.

Lift, drain and place on plate and top with tofu, vegetables and cilantro.

Fold the roll according to the instructions on the rice paper package.

Serve the rolls with mayonnaise and rice.
