Fresh spring rolls with soy mayonnaise

You could say that this is a fresher version of tacos. Fresh vegetables are placed in rice paper, which is then folded and dipped in dressing and a soy mayo. It doesn't get any better than that!

Ingredients

  • 1 lime
  • 2 tbsp Japanese soy
  • 1 tsp sambal oelek
  • 1/2 tbsp sesame seeds
  • 1 tbsp oil
  • 1 dl mayonnaise
  • 1/2 tbsp Japanese soy
  • 380 g silk tofu
  • 1/2 cucumber
  • about 200 g red cabbage
  • 2 avocados
  • 4 green onions
  • 1 pack coriander (each 20 g)
  • 12 sheets of rice paper

    Drizzle some dressing over the tofu and mix all the vegetables with the rest of the dressing.

    Pick the coriander leaves and put them in a bowl.

    At the table: Place a large bowl of lukewarm water on the table.

    Everyone dips their own rice paper into the water for 10-15 seconds.

    Lift, drain and place on plate and top with tofu, vegetables and cilantro.

    Fold the roll according to the instructions on the rice paper package.
