Fried egg with Thai dressing and herbs

Fried egg, Thai dressing with fresh herbs and salted peanuts is a perfect combination of creamy, sour, fresh and crunchy! Frying eggs is easier than you think, and here we serve them with an Asian dressing made from coriander, lime, lemongrass and chilli.

Ingredients

  • 1 pot coriander
  • 1 pot Thai basil
  • 2 small shallots
  • 1 clove of garlic
  • 1 stalk of lemongrass
  • 1 - 2 red pepper (chili)
  • 1 1/2 tbsp freshly squeezed lime juice
  • 2 tbsp Asian fish sauce
  • 2 tsp raw sugar
  • 1 l neutral rapeseed oil
  • 8 eggs
  • 1/2 cup chopped peanuts

    Mix onion, garlic, lemongrass, chilli, lime juice, fish sauce and sugar in a bowl.

    Heat the oil to 180°C.

    Crack 2 eggs at a time into the oil.

    Form the eggs using 2 spoons into small balls.

    Lift the eggs after about 1 minute, the yolk should still be runny but the white crispy.

    Drain on paper towels.

    Place the eggs on plates.

    Turn the herbs around in the dressing and add the peanuts.

    Top the eggs with the herb salad.
