Time for mellis? Spice up any snack with this green, nutritious beauty! Make a healthy pea hummus on sweet green peas and fresh mint and serve as buttered bread on a slice of rye bread together with prawns, boiled egg and smooth tahini sauce.
Ingredients

- 500 g thawed frozen green peas
- 1/2 dl rapeseed oil
- 2 tbsp freshly squeezed lemon juice
- 1/2 pot of mint (+ extra for garnish)
- 2 eggs
- 1 1/2 tbsp tahini
- 2 - 3 tbsp water
- 3 tsp Japanese soy
- 4 slices of rye bread
- 4 dl peeled shrimps (4 dl corresponds to approx. 250 g peeled shrimps)
- possibly salad leaves
- 1 - 2 tbsp grated horseradish
- salt
- black pepper
- lemon wedges

Add the eggs and cook for 7-8 minutes.

Cool the eggs and peel them.

Mix tahini with water and soy.

Halve the eggs.

Top with prawns, lettuce leaves, egg, horseradish, mint and black pepper.
