Ingredients

- 1 small yellow onion, finely chopped
- 2 tbsp light brown sugar
- 2 tbsp curry powder, plus extra for serving
- 2 tsp sweet smoked paprika
- 2 tsp onion powder
- 2 tsp balsamic vinegar
- 500 ml passata
- 100 ml apple juice
- 250 ml beef stock
- 1 tbsp mustard
- 2 tbsp Worcestershire sauce
- 2 tbsp ketchup
- 0.5 tsp bicarbonate of soda
- 4 bratwurst sausages
- Salt
- Chips or bread for serving, optional

Heat the oil in a deep frying pan. Cook the onion with a pinch of salt until softened.

Add the balsamic, passata, apple juice, stock, mustard, Worcestershire sauce, and ketchup. Simmer until the sauce thickens and the flavours come together.

Stir in the bicarbonate of soda, let the sauce bubble up, then blend until smooth with a hand blender or in a blender.

Fry or grill the bratwurst according to the package directions until hot through and nicely browned.

Cut the sausages into thick pieces, arrange on a plate, and spoon the curry sauce over the top.

Finish with extra curry powder and serve with chips or bread if you like.
