Fried potatoes with fried egg and mushrooms

Huevos rotos or huevos estrellados is called this dish in Spanish, which means broken eggs! Here we serve fried egg with fried potatoes, crispy fried mushrooms and chives, which are advantageously mixed around before serving so that the egg is distributed evenly.

Ingredients

  • 250 g mushrooms or oyster slivers
  • 1/2 silver onion
  • 3 cloves of garlic
  • 3 tbsp olive oil (for frying onions and mushrooms)
  • 5 dl neutral oil (for frying)
  • 4 eggs
  • 1 tbsp olive oil (for frying eggs)
  • 1/2 dl finely chopped chives
  • salt
  • black pepper
  • flake salt
  • olive oil

Method

    Peel the potatoes and cut them into cm-thick sticks and put in cold water.

    Fry until the mushrooms have a nice color.

    Season to taste with salt and pepper.

    Drain the potatoes and dry them completely with paper or a kitchen towel.

    Heat the oil to 170-180°C.

    Fry the potatoes for about 5 minutes until they are golden and crispy on the outside and soft on the inside.

    Lift up and put on a piece of kitchen paper and salt.

    Fry the eggs in 1 tablespoon of olive oil (for 4 port), the yolk should be runny.

    Put the potatoes on a plate, add the mushroom fryer, the eggs and top with the chives.

    Drizzle over a little olive oil.

    Break the eggs and mix well, sprinkle with flake salt and eat immediately.
