Roasted cauliflower salad with coriander and cucumber sauce

A fresh and nutritious salad in the middle of the week does the trick for body and taste buds. Cauliflower, bell peppers and green onions are roasted here in the oven. It is then mixed with garlic, sunflower seeds and soybeans, which are roasted for a while longer. This tasty dish is served with wheat and a lovely mixture of cucumber, sour cream, lime and coriander.

Ingredients

  • 2 red bell peppers
  • 1/2 pack green onions (each 125 g)
  • 2 packs of fresh cauliflower florets (each 160 g)
  • 1 tbsp olive oil
  • salt
  • pepper
  • 1 clove of garlic
  • 2 tbsp sunflower seeds
  • 250 g soybeans
  • 4 port wheat or kamut wheat
  • 1 pack of coriander (at 20 g)
  • 1 cucumber
  • 1 1/2 dl sour cream
  • 1 lime

Method

    Mix paprika, onion and cauliflower with the olive oil on the hot plate.

    Season with salt and pepper and roast in the middle of the oven first for 10 minutes.

    Press over the garlic and mix around, sprinkle over the sunflower seeds and soybeans and roast for another 5 minutes.

    Cook the semolina according to the instructions on the package.

    Chop the coriander and grate the cucumber roughly on a grater.

    Mix coriander and cucumber with sour cream.

    Season with lime juice (the rest of the lime can be cut into pieces for serving), salt and pepper.

    Serve the roasted vegetables with the grits and the cucumber sauce.
