Tray-baked chocolate cake with mocha icing and coconut, cut into squares for fika.
Ingredients
- 150 g butter
- 2 eggs
- 3 dl sugar
- 1.5 dl milk
- 4.5 dl plain flour
- 2 tsp baking powder
- 2 tbsp cocoa powder
- 75 g butter for the icing
- 0.75 dl strong coffee
- 0.5 dl cocoa powder
- 4 dl icing sugar
- 2 tsp vanilla sugar
- 1 pinch salt
- Desiccated coconut for finishing
Method
- 1Preheat the oven to 200 C and line a small traybake tin with baking paper.
- 2Melt the butter for the cake and let it cool slightly.
- 3Whisk the eggs and sugar until pale and fluffy.
- 4Stir in the milk and melted butter.
- 5Mix the flour, baking powder, and cocoa and fold into the batter.
- 6Spread the batter in the tin and bake for about 15 minutes. Let the cake cool.
- 7Boil the icing ingredients except the coconut and stir into a glossy icing.
- 8Spread the icing over the cooled cake and sprinkle with coconut. Let it set before cutting into squares.
