Tray-baked chocolate cake with mocha icing and coconut, cut into squares for fika.

Ingredients

  • 150 g butter
  • 2 eggs
  • 3 dl sugar
  • 1.5 dl milk
  • 4.5 dl plain flour
  • 2 tsp baking powder
  • 2 tbsp cocoa powder
  • 75 g butter for the icing
  • 0.75 dl strong coffee
  • 0.5 dl cocoa powder
  • 4 dl icing sugar
  • 2 tsp vanilla sugar
  • 1 pinch salt
  • Desiccated coconut for finishing

Method

  1. 1Preheat the oven to 200 C and line a small traybake tin with baking paper.
  2. 2Melt the butter for the cake and let it cool slightly.
  3. 3Whisk the eggs and sugar until pale and fluffy.
  4. 4Stir in the milk and melted butter.
  5. 5Mix the flour, baking powder, and cocoa and fold into the batter.
  6. 6Spread the batter in the tin and bake for about 15 minutes. Let the cake cool.
  7. 7Boil the icing ingredients except the coconut and stir into a glossy icing.
  8. 8Spread the icing over the cooled cake and sprinkle with coconut. Let it set before cutting into squares.
