Chocolate Mousse

Light and silky chocolate mousse with dark chocolate and whipped egg whites. A classic French dessert that never fails to impress guests.

Ingredients

  • 200 g dark chocolate (70%)
  • 4 eggs, separated
  • 2 tbsp sugar
  • 1 dl whipping cream
  • 1 pinch of salt

Method

  1. 1Melt the chocolate in a bain-marie or microwave. Cool slightly.
  2. 2Whip the egg whites with salt to soft peaks, add sugar and whip to stiff peaks.
  3. 3Whip the cream to soft peaks.
  4. 4Stir the egg yolks into the melted chocolate.
  5. 5Gently fold the whipped cream into the chocolate, then fold in the egg whites in stages – stir as little as possible.
  6. 6Divide into serving glasses and refrigerate for at least 2 hours before serving.
