Creamy matjes herring spread with tart apple, red onion and chives mixed with soured cream and mayonnaise. A classic Easter and herring table staple.
Ingredients
- 400 g matjes herring, cut into pieces
- 1 tart apple, peeled and diced
- 0.5 red onion, finely chopped
- 2 dl soured cream
- 2 tbsp mayonnaise
- 2 tbsp chopped chives
- 1 tbsp lemon juice
- White pepper
Method
- 1Cut the matjes herring fillets into bite-sized pieces, about 2 cm.
- 2Mix soured cream, mayonnaise and lemon juice into a smooth mixture. Season with white pepper.
- 3Stir in the herring, diced apple and red onion.
- 4Add the chopped chives and mix gently. Taste – the herring provides salt so extra is rarely needed.
- 5Serve cold on crispbread or open sandwiches, garnished with extra chive.
