Matjes herring spread with apple and chives

Creamy matjes herring spread with tart apple, red onion and chives mixed with soured cream and mayonnaise. A classic Easter and herring table staple.

Ingredients

  • 400 g matjes herring, cut into pieces
  • 1 tart apple, peeled and diced
  • 0.5 red onion, finely chopped
  • 2 dl soured cream
  • 2 tbsp mayonnaise
  • 2 tbsp chopped chives
  • 1 tbsp lemon juice
  • White pepper

Method

  1. 1Cut the matjes herring fillets into bite-sized pieces, about 2 cm.
  2. 2Mix soured cream, mayonnaise and lemon juice into a smooth mixture. Season with white pepper.
  3. 3Stir in the herring, diced apple and red onion.
  4. 4Add the chopped chives and mix gently. Taste – the herring provides salt so extra is rarely needed.
  5. 5Serve cold on crispbread or open sandwiches, garnished with extra chive.
