Oven-baked salmon with lemon and herbs

Juicy oven-baked salmon side with lemons, dill, tarragon and parsley. Easy to prepare and impressive to serve whole at the Easter table.

Ingredients

  • 1 kg salmon side with skin
  • 1 lemon, sliced
  • 2 tbsp olive oil
  • 3 garlic cloves, crushed
  • 2 tbsp chopped dill
  • 1 tbsp chopped tarragon
  • 1 tbsp chopped parsley
  • Salt and black pepper
  • Lemon wedges for serving

Method

  1. 1Preheat the oven to 200°C. Line a baking tray with baking paper.
  2. 2Mix olive oil, garlic, chopped dill, tarragon, parsley, salt and black pepper.
  3. 3Place the salmon skin-side down on the tray. Spread the herb mixture evenly over the salmon.
  4. 4Arrange the lemon slices on top.
  5. 5Bake for 15–20 minutes depending on thickness, until the salmon is just cooked through and flakes easily.
  6. 6Serve immediately with lemon wedges, boiled potatoes and salad.
