Juicy oven-baked salmon side with lemons, dill, tarragon and parsley. Easy to prepare and impressive to serve whole at the Easter table.
Ingredients
- 1 kg salmon side with skin
- 1 lemon, sliced
- 2 tbsp olive oil
- 3 garlic cloves, crushed
- 2 tbsp chopped dill
- 1 tbsp chopped tarragon
- 1 tbsp chopped parsley
- Salt and black pepper
- Lemon wedges for serving
Method
- 1Preheat the oven to 200°C. Line a baking tray with baking paper.
- 2Mix olive oil, garlic, chopped dill, tarragon, parsley, salt and black pepper.
- 3Place the salmon skin-side down on the tray. Spread the herb mixture evenly over the salmon.
- 4Arrange the lemon slices on top.
- 5Bake for 15–20 minutes depending on thickness, until the salmon is just cooked through and flakes easily.
- 6Serve immediately with lemon wedges, boiled potatoes and salad.
