Västerbotten Cheese Tart

Classic Swedish Västerbotten cheese tart with a crisp pastry shell and a rich filling of Västerbotten cheese, eggs and cream. Perfect for midsummer and celebrations.

Ingredients

  • Pastry: 150 g cold butter
  • Pastry: 3 dl all-purpose flour
  • Pastry: 1 egg
  • Pastry: 2 tbsp cold water
  • Filling: 200 g grated Västerbotten cheese
  • Filling: 3 eggs
  • Filling: 2 dl heavy cream
  • Filling: 0.5 tsp salt
  • Filling: 0.25 tsp white pepper

Method

  1. 1Combine flour and cold diced butter until crumbly. Add the egg and cold water and bring together quickly into a dough.
  2. 2Roll out the pastry and line a tart tin (about 24 cm). Prick the base. Chill for 20 minutes.
  3. 3Preheat oven to 200°C. Blind bake the pastry case with parchment and dried beans for 15 minutes. Remove the weights and bake for a further 5 minutes.
  4. 4Lower the oven temperature to 175°C.
  5. 5Whisk together eggs, cream, salt and pepper. Stir in the grated cheese.
  6. 6Pour the filling into the pre-baked pastry case.
  7. 7Bake for 30 minutes until the filling has set and the top is lightly golden.
  8. 8Serve warm or at room temperature with salad and lingonberry jam.
