Vegetarian Västerbotten cheese tart

Classic Västerbotten cheese tart without meat – rich egg custard with the characteristic saltiness of Västerbotten cheese in a shortcrust shell.
Ingredients
- 200 g plain flour
- 100 g cold butter, diced
- 3 tbsp cold water
- 0.5 tsp salt
- 3 eggs
- 2 dl whipping cream
- 1 dl crème fraîche
- 200 g Västerbotten cheese, grated
- Salt and white pepper
Method
- 1Rub flour, salt and butter until crumbly. Add water and work quickly into a dough. Wrap and chill 30 minutes.
- 2Roll out and line a tart tin (26 cm). Prick the base and blind bake at 200°C for 10 minutes. Remove weights and bake 5 more minutes.
- 3Whisk eggs, cream and crème fraîche. Stir in 150 g of the Västerbotten cheese. Season with salt and white pepper – the cheese is salty, so go easy.
- 4Pour the filling into the pastry case and scatter the remaining 50 g cheese on top.
- 5Bake at 180°C for 30–35 minutes until golden and set.
- 6Leave to cool slightly and serve with salad and lingonberries.
