Creamy penne alla vodka with tomato, cream and parmesan. A trendy classic that is surprisingly easy and quick to make.
Ingredients
- 400 g penne
- 2 tbsp olive oil
- 4 garlic cloves, finely chopped
- 1 tsp chilli flakes
- 0.5 dl vodka
- 400 g crushed tomatoes
- 1 dl heavy cream
- 50 g grated parmesan
- 1 tsp salt
- 0.5 tsp black pepper
- Fresh basil to garnish
Method
- 1Cook the penne in well-salted boiling water according to the packet instructions. Reserve 1 dl pasta water before draining.
- 2Heat the olive oil in a large pan over medium heat. Sauté the garlic and chilli flakes for 1–2 minutes until fragrant.
- 3Add the vodka and cook for 2 minutes to reduce.
- 4Pour in the crushed tomatoes and simmer over low heat for 10 minutes.
- 5Stir in the cream and simmer for a further 3 minutes. Season with salt and pepper.
- 6Toss the drained pasta with the sauce. Add a little pasta water if needed for consistency.
- 7Serve with grated parmesan and fresh basil.
