Simple banana pancakes with banana, eggs, a little vanilla, and butter for frying, common in Sweden as a quick breakfast or snack.

Ingredients

  • 2 ripe bananas
  • 4 medium eggs
  • 1 pinch salt
  • 1 tsp vanilla sugar or vanilla extract, optional
  • 25 g butter for frying
  • Optional toppings such as berries, yoghurt, or syrup

Method

  1. 1Peel the bananas and slice them into a bowl.
  2. 2Mash the bananas thoroughly with a fork or blend them smooth.
  3. 3Add the eggs, salt, and optional vanilla and blend into a smooth batter.
  4. 4Heat a frying pan with a little butter over medium to medium-high heat.
  5. 5Cook two to three small pancakes at a time for about 2 to 3 minutes per side until lightly golden.
  6. 6Cook the rest of the batter the same way.
  7. 7Serve immediately with optional toppings such as berries, yoghurt, or a little syrup.
