    Mix the flour, baking powder, salt, and optional cinnamon in a bowl.

    Bring the water to the boil and stir it into the dry ingredients. Work it into a smooth dough and let it cool for about 5 minutes.

    Transfer the dough to a churro maker or a piping bag fitted with a star tip. Heat the oil to about 177C in a saucepan or deep frying pan.

    Pipe rings or short lengths straight into the hot oil and fry until golden all over. Drain on paper towels and toss with a little sugar while still warm.
