    Hull and slice most of the strawberries. Mash a third of them to a rough purée with 1 tbsp icing sugar.

    Whip the cream with the remaining icing sugar and vanilla to soft peaks.

    Roughly crush the meringues into large pieces.

    Gently fold together the cream, meringue pieces, sliced strawberries and strawberry purée.
