Pork Tenderloin Stew with Cream and Mushrooms

Creamy pork tenderloin stew with mushrooms, cream and thyme. A delicious and satisfying dinner that works any day of the week.

Ingredients

  • 600 g pork tenderloin, sliced
  • 300 g button mushrooms, sliced
  • 2 dl whipping cream
  • 1 dl crème fraîche
  • 1 yellow onion, chopped
  • 2 garlic cloves, pressed
  • 2 tbsp butter
  • 1 tbsp tomato purée
  • salt and pepper
  • fresh thyme

Method

  1. 1Brown the pork slices in butter in a hot pan. Set aside.
  2. 2Fry the onion and mushrooms in the same pan until softened and lightly golden.
  3. 3Add the garlic and tomato purée, fry for another minute.
  4. 4Pour in the cream and crème fraîche. Return the pork to the pan.
  5. 5Simmer on low heat for 10 minutes. Season with salt, pepper and thyme.
  6. 6Serve with rice, pasta or potatoes.
