Pork Tenderloin Stew with Cream and Mushrooms

Creamy pork tenderloin stew with mushrooms, cream and thyme. A delicious and satisfying dinner that works any day of the week.
Ingredients
- 600 g pork tenderloin, sliced
- 300 g button mushrooms, sliced
- 2 dl whipping cream
- 1 dl crème fraîche
- 1 yellow onion, chopped
- 2 garlic cloves, pressed
- 2 tbsp butter
- 1 tbsp tomato purée
- salt and pepper
- fresh thyme
Method
- 1Brown the pork slices in butter in a hot pan. Set aside.
- 2Fry the onion and mushrooms in the same pan until softened and lightly golden.
- 3Add the garlic and tomato purée, fry for another minute.
- 4Pour in the cream and crème fraîche. Return the pork to the pan.
- 5Simmer on low heat for 10 minutes. Season with salt, pepper and thyme.
- 6Serve with rice, pasta or potatoes.
