Classic Swedish Christmas toffee with cream, sugar and chopped almonds. Creamy inside with a firm shell – the perfect Christmas confectionery.
Ingredients
- 2 dl whipping cream
- 2 dl sugar
- 1 dl golden syrup
- 100 g chopped almonds
- butter for the moulds
Method
- 1Grease small paper sweet cases and place on a tray.
- 2Boil cream, sugar and syrup in a heavy-based saucepan, stirring.
- 3Cook uncovered over medium heat until the mixture reaches 125°C (hard ball stage). Use a sugar thermometer.
- 4Stir in the chopped almonds.
- 5Quickly pour into the prepared cases. Leave to cool and set at room temperature.
