Swedish Toffee (Knäck)

Classic Swedish Christmas toffee with cream, sugar and chopped almonds. Creamy inside with a firm shell – the perfect Christmas confectionery.

Ingredients

  • 2 dl whipping cream
  • 2 dl sugar
  • 1 dl golden syrup
  • 100 g chopped almonds
  • butter for the moulds

Method

  1. 1Grease small paper sweet cases and place on a tray.
  2. 2Boil cream, sugar and syrup in a heavy-based saucepan, stirring.
  3. 3Cook uncovered over medium heat until the mixture reaches 125°C (hard ball stage). Use a sugar thermometer.
  4. 4Stir in the chopped almonds.
  5. 5Quickly pour into the prepared cases. Leave to cool and set at room temperature.
