    Combine flour and cold diced butter until crumbly. Add the egg and cold water and bring together quickly into a dough.

    Roll out the pastry and line a tart tin (about 24 cm). Prick the base. Chill for 20 minutes.

    Preheat oven to 200°C. Blind bake the pastry case with parchment and dried beans for 15 minutes. Remove the weights and bake for a further 5 minutes.

    Lower the oven temperature to 175°C.
