Bulgaria's beloved filo pastry pie filled with a tangy white cheese and egg filling. Eaten for breakfast or as a snack throughout the day.

Ingredients

  • 400 g filo pastry
  • 400 g Bulgarian white cheese (or feta)
  • 4 eggs
  • 100 ml sunflower oil
  • 150 ml sparkling water or yogurt

Method

    Crumble the cheese. Mix with beaten eggs and sparkling water.

    Brush a round baking tin with oil.

    Brush each filo sheet with oil. Place 2-3 sheets in the tin, letting the edges overhang.

    Add a layer of the cheese mixture.

    Continue layering filo and cheese mixture. Fold in the overhanging edges.

    Brush the top with oil. Bake at 190°C for 35-40 minutes until golden.
