Bobotie – South African Curried Meat Loaf

South Africa's national dish – spiced curried mince topped with a creamy egg custard. Served with yellow rice and chutney.

Ingredients

  • 600 g ground beef or lamb
  • 2 slices white bread, soaked in milk
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp curry powder
  • 1/2 tsp turmeric
  • 2 tbsp apricot jam or chutney
  • 50 g raisins
  • 1 tbsp lemon juice
  • Salt and pepper
  • 2 eggs
  • 200 ml milk
  • 2 bay leaves

Method

    Preheat oven to 175°C. Sauté onion and garlic until soft; add curry powder and turmeric.

    Add ground meat and cook until browned. Stir in squeezed bread, apricot jam, raisins, lemon juice, salt and pepper.

    Transfer to a baking dish. Whisk eggs with milk and pour over. Push bay leaves into the mixture.

    Bake 45 minutes until custard is set and golden. Remove bay leaves before serving.
