Thick and fluffy American-style pancakes made with buttermilk. Perfect for a weekend breakfast served with maple syrup and butter.
Ingredients
- 3 dl all-purpose flour
- 2 tsp baking powder
- 0.5 tsp salt
- 2 tbsp sugar
- 2 dl buttermilk (or milk + 1 tbsp vinegar)
- 1 egg
- 2 tbsp melted butter
- Butter for frying
Method
- 1Combine flour, baking powder, salt and sugar in a bowl.
- 2Whisk buttermilk, egg and melted butter together in a separate bowl.
- 3Stir the wet ingredients into the dry ingredients just until combined – a few lumps are fine.
- 4Let the batter rest for 5 minutes.
- 5Heat a frying pan over medium heat and melt a little butter.
- 6Pour about 0.5 dl batter per pancake. Cook until bubbles form on the surface and edges look set.
- 7Flip and cook a further 1–2 minutes until golden brown. Serve immediately with maple syrup.
