Moist and flavourful apple cake with cinnamon and vanilla. A simple and beloved cake equally at home at fika time or as a dessert with custard.
Ingredients
- 3 apples, peeled and diced
- 1 dl sugar
- 1 tsp ground cinnamon
- 150 g butter (room temperature)
- 1.5 dl sugar
- 3 eggs
- 3 dl all-purpose flour
- 1 tsp baking powder
- 1 dl milk
- 1 tsp vanilla sugar
Method
- 1Preheat oven to 175°C. Grease and flour a springform tin (about 24 cm).
- 2Mix the diced apples with 1 dl sugar and cinnamon. Set aside.
- 3Beat butter and sugar until light and fluffy. Add the eggs one at a time, beating well.
- 4Combine flour, baking powder and vanilla sugar. Fold into the butter mixture alternately with the milk.
- 5Pour the batter into the tin. Distribute the apple mixture on top and press the pieces in slightly.
- 6Bake for 40–45 minutes until a skewer comes out clean.
- 7Leave to cool in the tin. Serve with vanilla custard or lightly whipped cream.
