Moist blueberry muffins with a soft crumb packed full of blueberries. Classic American muffins that are quick to bake and always appreciated.
Ingredients
- 3 dl all-purpose flour
- 1.5 dl sugar
- 2 tsp baking powder
- 0.5 tsp salt
- 1 dl milk
- 0.5 dl neutral oil
- 2 eggs
- 1 tsp vanilla sugar
- 200 g blueberries (fresh or frozen)
Method
- 1Preheat oven to 190°C. Place muffin cases in a tin.
- 2Mix flour, sugar, baking powder and salt in a large bowl.
- 3Whisk together milk, oil, eggs and vanilla sugar in another bowl.
- 4Combine the wet and dry ingredients – stir only until just mixed (a few lumps are fine).
- 5Gently fold in the blueberries.
- 6Divide into muffin cases and bake for 18–20 minutes until a skewer comes out clean.
