Blueberry Muffins

Moist blueberry muffins with a soft crumb packed full of blueberries. Classic American muffins that are quick to bake and always appreciated.

Ingredients

  • 3 dl all-purpose flour
  • 1.5 dl sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 1 dl milk
  • 0.5 dl neutral oil
  • 2 eggs
  • 1 tsp vanilla sugar
  • 200 g blueberries (fresh or frozen)

Method

  1. 1Preheat oven to 190°C. Place muffin cases in a tin.
  2. 2Mix flour, sugar, baking powder and salt in a large bowl.
  3. 3Whisk together milk, oil, eggs and vanilla sugar in another bowl.
  4. 4Combine the wet and dry ingredients – stir only until just mixed (a few lumps are fine).
  5. 5Gently fold in the blueberries.
  6. 6Divide into muffin cases and bake for 18–20 minutes until a skewer comes out clean.
