Fried Falukorv Sausage with Mustard and Eggs

Pan-fried falukorv Swedish sausage with a mustard crust, served with fried eggs and bread. A quick and beloved Swedish everyday classic.

Ingredients

  • 1 falukorv sausage (about 500 g)
  • 2 tbsp butter
  • 2 tbsp Dijon mustard
  • 4 eggs
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 slices bread

Method

  1. 1Slice the falukorv sausage into slices about 1 cm thick.
  2. 2Melt the butter in a frying pan over medium-high heat.
  3. 3Spread a little mustard on one side of each sausage slice.
  4. 4Place the slices mustard-side down in the pan and fry for about 3 minutes per side until nicely browned.
  5. 5Fry the eggs in the same pan alongside the sausage until the whites are set but the yolks are still runny.
  6. 6Season the eggs with salt and pepper. Serve the sausage and eggs with bread.
