Classic stuffed peppers with ground beef, rice, and melted cheese. A satisfying and colorful meal.
Ingredients
- 4 large bell peppers (red, yellow, or green)
- 400 g ground beef
- 1 dl uncooked rice (e.g., long-grain)
- 1 yellow onion, chopped
- 2 garlic cloves, pressed
- 400 g crushed tomatoes
- 1 msk tomato paste
- 1 tsp dried oregano
- Salt and pepper
- 1.5 dl shredded cheese
Method
- 1Cook the rice according to package instructions.
- 2Preheat oven to 200°C (400°F). Cut the tops off the peppers and remove the seeds.
- 3Sauté onion and garlic until soft. Add ground beef and brown until cooked through.
- 4Stir in tomato paste, crushed tomatoes, oregano, salt, pepper, and the cooked rice. Let it simmer for a few minutes.
- 5Fill the peppers with the meat and rice mixture and place them in a baking dish.
- 6Sprinkle cheese on top. Bake in the oven for 25-30 minutes until the peppers are soft and the cheese is golden.
- 7Serve as is or with a fresh salad.
