Flaky, buttery pastries filled with a rich vanilla custard. A classic of Nordic baking that is worth the effort.
Ingredients
- 500 g cold butter
- 500 g bread flour
- 50 g yeast
- 2 dl cold milk
- 1 egg
- Vanilla custard for filling
- Icing sugar for glaze
Method
- 1Make a yeast dough and let it rest in the cold.
- 2Laminate the dough with the butter by rolling and folding several times.
- 3Cut into squares, add a dollop of custard in the center, and fold the corners in.
- 4Let proof and then bake at 225°C (435°F) for 10-12 minutes.
- 5Glaze with icing sugar once cooled.
