Flaky, buttery pastries filled with a rich vanilla custard. A classic of Nordic baking that is worth the effort.

Ingredients

  • 500 g cold butter
  • 500 g bread flour
  • 50 g yeast
  • 2 dl cold milk
  • 1 egg
  • Vanilla custard for filling
  • Icing sugar for glaze

Method

  1. 1Make a yeast dough and let it rest in the cold.
  2. 2Laminate the dough with the butter by rolling and folding several times.
  3. 3Cut into squares, add a dollop of custard in the center, and fold the corners in.
  4. 4Let proof and then bake at 225°C (435°F) for 10-12 minutes.
  5. 5Glaze with icing sugar once cooled.
