Smooth and creamy hummus made with chickpeas, tahini and lemon juice. Perfect as a dip with pitta bread, vegetables or as a side to grilled meat.

Ingredients

  • 400 g cooked chickpeas (or 1 tin, drained)
  • 3 tbsp tahini
  • 2 tbsp fresh lemon juice
  • 2 garlic cloves
  • 0.5 tsp salt
  • 0.5 tsp ground cumin
  • 3 tbsp olive oil
  • 2–4 tbsp iced water

Method

  1. 1Place chickpeas, tahini, lemon juice, garlic, salt and cumin in a food processor.
  2. 2Blend on high speed for 2 minutes.
  3. 3Add iced water one tablespoon at a time and continue blending until the hummus is silky smooth, about 4–5 minutes in total.
  4. 4Taste and adjust with more salt or lemon juice.
  5. 5Transfer to a plate and make a well in the centre. Drizzle with olive oil.
  6. 6Garnish with paprika, parsley or whole chickpeas. Serve with warm pitta bread.
