Smooth and creamy hummus made with chickpeas, tahini and lemon juice. Perfect as a dip with pitta bread, vegetables or as a side to grilled meat.
Ingredients
- 400 g cooked chickpeas (or 1 tin, drained)
- 3 tbsp tahini
- 2 tbsp fresh lemon juice
- 2 garlic cloves
- 0.5 tsp salt
- 0.5 tsp ground cumin
- 3 tbsp olive oil
- 2–4 tbsp iced water
Method
- 1Place chickpeas, tahini, lemon juice, garlic, salt and cumin in a food processor.
- 2Blend on high speed for 2 minutes.
- 3Add iced water one tablespoon at a time and continue blending until the hummus is silky smooth, about 4–5 minutes in total.
- 4Taste and adjust with more salt or lemon juice.
- 5Transfer to a plate and make a well in the centre. Drizzle with olive oil.
- 6Garnish with paprika, parsley or whole chickpeas. Serve with warm pitta bread.
