Gooey Chocolate Muffins

Moist chocolate muffins with a gooey fudgy centre – the muffin version of the beloved Swedish kladdkaka. Quick to bake and always a hit.
Ingredients
- 150 g butter
- 2 dl sugar
- 2 eggs
- 1 tsp vanilla sugar
- 1.5 dl all-purpose flour
- 3 tbsp cocoa powder
- 1 pinch of salt
- icing sugar to dust
Method
- 1Preheat oven to 175°C. Place muffin cases in a tin.
- 2Melt the butter and let it cool slightly. Stir in sugar, eggs and vanilla sugar.
- 3Sift in flour, cocoa and salt. Mix until just combined.
- 4Divide the batter into the muffin cases, filling about two-thirds full.
- 5Bake for 12–14 minutes – the centre should still be slightly gooey.
- 6Cool and dust with icing sugar before serving.
