Gooey Chocolate Muffins

Moist chocolate muffins with a gooey fudgy centre – the muffin version of the beloved Swedish kladdkaka. Quick to bake and always a hit.

Ingredients

  • 150 g butter
  • 2 dl sugar
  • 2 eggs
  • 1 tsp vanilla sugar
  • 1.5 dl all-purpose flour
  • 3 tbsp cocoa powder
  • 1 pinch of salt
  • icing sugar to dust

Method

  1. 1Preheat oven to 175°C. Place muffin cases in a tin.
  2. 2Melt the butter and let it cool slightly. Stir in sugar, eggs and vanilla sugar.
  3. 3Sift in flour, cocoa and salt. Mix until just combined.
  4. 4Divide the batter into the muffin cases, filling about two-thirds full.
  5. 5Bake for 12–14 minutes – the centre should still be slightly gooey.
  6. 6Cool and dust with icing sugar before serving.
