Rice Pudding

A traditional Swedish rice porridge, often served at Christmas but delicious year-round. Top with cinnamon and sugar.

• 1.5 dl porridge rice
• 3 dl water
• 7–8 dl milk
• 1 cinnamon stick
• 0.5 tsp salt
• 1 tbsp butter

Method

1. 1
   Bring water, rice, and salt to a boil. Simmer under lid for 10 minutes.

   Add milk, butter, and cinnamon stick. Bring back to a simmer.

   Let the porridge swell on very low heat for 30–40 minutes without stirring.

   Serve with extra milk, cinnamon, and sugar.
