Popular American baked treat with a buttery shortbread base and creamy lemon curd topping. Powerfully tart and sweet – dusted with powdered sugar and perfect for afternoon tea.

Ingredients

  • 200 g all-purpose flour
  • 60 g powdered sugar
  • 150 g cold butter, diced
  • 200 g granulated sugar
  • 3 eggs
  • 150 ml lemon juice (about 3 lemons)
  • Zest of 2 lemons
  • 2 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • A pinch of salt
  • Powdered sugar to garnish

Method

    Preheat oven to 175°C. Mix flour, powdered sugar and butter until crumbly. Press into a greased pan and pre-bake 15 minutes.

    Whisk sugar, eggs, lemon juice, lemon zest, flour, baking powder and salt to a smooth filling.

    Pour filling over the warm crust. Bake 20–25 minutes until set.

    Cool completely. Dust with powdered sugar and cut into bars.
