Swedish Gingerbread Cookies

Crispy and thin Swedish gingerbread cookies with cinnamon, ginger and cloves. A Christmas classic that smells of the season and looks as good as it tastes.

Ingredients

  • 200 g butter
  • 2 dl sugar
  • 0.5 dl dark syrup
  • 2 tsp cinnamon
  • 2 tsp ground ginger
  • 1 tsp ground cloves
  • 1 tsp bicarbonate of soda
  • 1 egg
  • approx. 7 dl all-purpose flour

Method

  1. 1Melt butter with sugar, syrup and spices in a saucepan. Leave to cool to room temperature.
  2. 2Stir in the egg. Mix bicarbonate with a little flour and stir in, then add the rest.
  3. 3Bring together into a smooth dough. Wrap and refrigerate overnight.
  4. 4Preheat oven to 200°C. Roll out the dough thinly (about 2 mm) on a floured surface.
  5. 5Cut out shapes and place on baking parchment.
  6. 6Bake for 5–7 minutes until crisp. Cool on a rack.
