  • 4 beets, roasted or boiled, diced
  • 1 apple, diced
  • 2 cornichons or pickles, chopped
  • 1/2 red onion, finely chopped
  • 1 tbsp grated horseradish
  • 3 tbsp sour cream or plain yogurt
  • Salt and pepper
