Classic Potato Salad

Creamy classic potato salad with mayonnaise, Dijon mustard, red onion and capers. The perfect side dish for barbecues and summer meals.
Ingredients
- 1 kg waxy potatoes
- 2 dl mayonnaise
- 1 tbsp Dijon mustard
- 1 red onion, finely chopped
- 2 tbsp finely chopped chives
- 2 tbsp capers
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tbsp white wine vinegar
Method
- 1Boil the potatoes in their skins in salted water until tender, about 20 minutes.
- 2Allow to cool, then peel and cut into bite-sized pieces.
- 3Whisk together mayonnaise, Dijon mustard, white wine vinegar, salt and pepper in a large bowl.
- 4Add the potatoes, red onion and capers and mix gently.
- 5Taste and adjust seasoning.
- 6Refrigerate for at least 30 minutes. Scatter over the chives just before serving.
