Classic Potato Salad

Creamy classic potato salad with mayonnaise, Dijon mustard, red onion and capers. The perfect side dish for barbecues and summer meals.

Ingredients

  • 1 kg waxy potatoes
  • 2 dl mayonnaise
  • 1 tbsp Dijon mustard
  • 1 red onion, finely chopped
  • 2 tbsp finely chopped chives
  • 2 tbsp capers
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp white wine vinegar

Method

  1. 1Boil the potatoes in their skins in salted water until tender, about 20 minutes.
  2. 2Allow to cool, then peel and cut into bite-sized pieces.
  3. 3Whisk together mayonnaise, Dijon mustard, white wine vinegar, salt and pepper in a large bowl.
  4. 4Add the potatoes, red onion and capers and mix gently.
  5. 5Taste and adjust seasoning.
  6. 6Refrigerate for at least 30 minutes. Scatter over the chives just before serving.
