Silky smooth cold leek and potato soup enriched with cream. Vichyssoise is an elegant French classic served ice-cold and garnished with chives – perfect as a starter on a warm day.

Ingredients

  • 3 leeks, white and light green parts, sliced
  • 3 potatoes, peeled and diced
  • 1 liter chicken or vegetable stock
  • 200 ml heavy cream
  • 30 g butter
  • Salt and white pepper
  • Chives, chopped, to garnish

Method

    Melt butter in a pot. Gently sauté leeks until soft without browning, about 10 minutes.

    Add potatoes and stock; bring to a boil and simmer until potatoes are tender, about 20 minutes.

    Blend soup until smooth. Stir in cream and season with salt and white pepper.

    Cool, then refrigerate for at least 4 hours. Serve ice-cold garnished with chives.
