South-East Asian grilled meat skewers with a rich and creamy peanut dipping sauce. Equally delicious with chicken, beef or pork.

Ingredients

  • 600 g chicken breast or thighs, cut into strips
  • 3 tbsp soy sauce
  • 1 tbsp curry powder
  • 1 tbsp turmeric
  • 1 tbsp sugar
  • 200 g crunchy peanut butter
  • 200 ml coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp sugar
  • 2 garlic cloves, minced
  • 1 tsp sambal or chilli

Method

    Marinate chicken in soy, curry powder, turmeric and sugar for 1 hour.

    Thread onto bamboo skewers.

    Make peanut sauce: heat coconut milk with peanut butter, soy sauce, lime juice, sugar, garlic and sambal. Simmer until thick.

    Grill the skewers over high heat for 8-10 minutes, turning, until charred.

    Serve with the warm peanut sauce.

    Accompany with cucumber and onion as a fresh relish.
