Elegant Peruvian cold appetizer of yellow potatoes flavored with lime and ají amarillo, layered with chicken and mayonnaise, topped with avocado and black olives.

Ingredients

  • 800 g yellow potatoes, boiled and mashed
  • 3 tbsp lime juice
  • 2 tbsp ají amarillo paste
  • 2 tbsp neutral oil
  • Salt
  • 300 g cooked chicken breast, shredded
  • 4 tbsp mayonnaise
  • 1 avocado, sliced
  • 3 hard-boiled eggs, sliced
  • Black olives

Method

    Mix warm mashed potatoes with lime juice, ají amarillo paste, oil and salt until smooth. Cool.

    Mix chicken with mayonnaise.

    Press half the potato mixture into a mold. Spread chicken filling over, add avocado and egg slices.

    Top with remaining potato and press together. Refrigerate 1 hour. Garnish with olives when serving.
