Swedish Toffee Cookies

Classic Swedish toffee cookies made with butter, syrup and a hard caramel-like crust. Easy to bake and perfect with a cup of coffee.
Ingredients
- 150 g butter
- 1 dl caster sugar
- 2 tbsp golden syrup
- 1 tsp vanilla sugar
- 0.5 tsp baking powder
- 3 dl all-purpose flour
Method
- 1Preheat oven to 175°C. Line baking trays with parchment paper.
- 2Melt the butter in a saucepan. Add the sugar and syrup and stir. Leave to cool to room temperature.
- 3Mix flour, vanilla sugar and baking powder. Stir into the butter mixture and bring together into a dough.
- 4Roll the dough into a long log and cut into about 40 pieces, or roll into balls.
- 5Place the balls on the trays with plenty of space between them. Press flat gently with a fork.
- 6Bake for 8–10 minutes until golden brown.
- 7Leave to cool on the tray – the cookies harden as they cool.
