  • 8 lamb chops
  • 2 tbsp olive oil
  • Salt and pepper
  • 300 g green peas (fresh or frozen)
  • 30 g butter
  • 2 garlic cloves, minced
  • 1 bunch mint, chopped
  • Zest and juice of 1 lemon

    Brush lamb chops with olive oil, season with salt and pepper. Grill or sear in a hot pan 3–4 minutes per side until pink inside. Rest.
