Grilled shrimp with a fresh Caribbean mango salsa of mango, red bell pepper, red onion, cilantro and lime juice. Quick, summery and full of tropical flavor.

Ingredients

  • 500 g shrimp, peeled and deveined
  • 2 garlic cloves, grated
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • Salt and pepper
  • 1 mango, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 bunch cilantro, chopped
  • 1 jalapeño, minced
  • 2 tbsp lime juice (for salsa)

Method

    Mix garlic, lime juice, olive oil, salt and pepper. Marinate shrimp 15 minutes.

    Combine mango, bell pepper, onion, cilantro, jalapeño and lime juice for the salsa.

    Grill or sauté shrimp 2–3 minutes until pink and cooked.

    Serve shrimp topped with mango salsa.
