Shanghainese noodles tossed in deeply caramelized scallion-infused oil and sweet-savory soy sauce. Simple ingredients but complex and addictive flavor.

Ingredients

  • 300 g wheat noodles
  • 6 scallions, cut into 5 cm lengths
  • 3 slices ginger
  • 3 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 4 tbsp vegetable oil
  • 1 tsp sesame oil

Method

    Cook noodles, drain and set aside.

    Heat oil in a wok over medium heat. Fry scallions and ginger until deeply golden and fragrant. Remove from oil.

    Mix soy sauce, dark soy sauce and sugar in a bowl.

    Toss noodles with scallion oil and soy mixture. Add sesame oil. Serve.
