Simple Kenyan dish of sautéed collard greens or kale with onion, tomato and garlic. Quick to make and packed with nutrients – served traditionally with ugali.

Ingredients

  • 400 g collard greens or kale, shredded
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 garlic cloves, minced
  • 2 tbsp vegetable oil
  • 1 tsp ground coriander
  • Salt and pepper
  • 1 tbsp lime juice

Method

    Heat oil in a pan. Sauté onion and garlic until fragrant.

    Add tomatoes and coriander; cook 5 minutes until tomatoes soften.

    Stir in greens and sauté until wilted and tender, about 5 minutes.

    Season with salt, pepper and lime juice. Serve with rice or ugali.
