A moist, tender, and sweet quick bread packed with grated zucchini and a hint of cinnamon. Reminiscent of carrot cake!
Ingredients
- 4 dl all-purpose flour
- 1 tsp baking powder
- 0.5 tsp baking soda
- 1 tsp ground cinnamon
- 0.5 tsp salt
- 2 eggs
- 1.5 dl granulated sugar
- 1 dl brown sugar
- 1.5 dl neutral oil (e.g., canola oil)
- 1 tsp vanilla extract
- 3 dl finely grated zucchini (about 1 medium)
- 1 dl chopped walnuts (optional)
Method
- 1Preheat oven to 175°C (350°F). Grease and flour a loaf pan.
- 2In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- 3In another larger bowl, whisk together eggs, sugar, brown sugar, oil, and vanilla until smooth.
- 4Fold in the grated zucchini.
- 5Gradually stir the dry ingredients into the wet ingredients until just combined. Fold in walnuts if using.
- 6Pour batter into the prepared pan and bake for 55-60 minutes, or until a toothpick comes out clean.
- 7Let cool in the pan for 10 minutes, then transfer to a wire rack.
