Zucchini Bread

A moist, tender, and sweet quick bread packed with grated zucchini and a hint of cinnamon. Reminiscent of carrot cake!

Ingredients

  • 4 dl all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp salt
  • 2 eggs
  • 1.5 dl granulated sugar
  • 1 dl brown sugar
  • 1.5 dl neutral oil (e.g., canola oil)
  • 1 tsp vanilla extract
  • 3 dl finely grated zucchini (about 1 medium)
  • 1 dl chopped walnuts (optional)

Method

  1. 1Preheat oven to 175°C (350°F). Grease and flour a loaf pan.
  2. 2In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. 3In another larger bowl, whisk together eggs, sugar, brown sugar, oil, and vanilla until smooth.
  4. 4Fold in the grated zucchini.
  5. 5Gradually stir the dry ingredients into the wet ingredients until just combined. Fold in walnuts if using.
  6. 6Pour batter into the prepared pan and bake for 55-60 minutes, or until a toothpick comes out clean.
  7. 7Let cool in the pan for 10 minutes, then transfer to a wire rack.
