Soft, chewy cookies with a Dumle toffee pressed into the centre while still hot. A Swedish favourite that always goes down well.

Ingredients

  • 150 g butter, softened
  • 1 dl caster sugar
  • 1 dl brown sugar
  • 1 egg
  • 2 dl plain flour
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • 1 pinch salt
  • 24 Dumle toffee sweets

Method

    Preheat the oven to 175 °C. Line a baking sheet with parchment paper.

    Beat butter and both sugars until light and fluffy. Add the egg and mix well.

    Combine flour, cocoa, baking powder and salt. Fold into the butter mixture to form an even dough.

    Roll the dough into balls, about a tablespoon of dough per cookie. Place on the tray with a little space between them.

    Bake for 9–10 minutes. Remove from the oven and immediately press a Dumle into the centre of each cookie. Leave to cool — the toffee will melt and settle.
