Lasagna Soup

All the amazing flavors of a classic lasagna in a warming and faster soup format.

• 400 g ground beef
• 1 yellow onion, finely chopped
• 2 garlic cloves, finely chopped
• 1 tbsp olive oil
• 2 tbsp tomato paste
• 400 g crushed tomatoes
• 8 dl beef stock
• 1 tsp dried basil
• 1 tsp dried oregano
• 150 g lasagna sheets, broken into pieces
• 1 dl whipping cream
• Shredded mozzarella and a dollop of ricotta for serving

Method

   Sauté onion and garlic in olive oil in a large pot until soft.

   Add ground beef and brown until cooked through. Stir in tomato paste, basil, and oregano.

   Pour in crushed tomatoes and beef stock. Bring to a boil.

   Add the broken lasagna sheets and simmer until the pasta is tender (about 10–12 minutes).

   Stir in the cream and heat through.

   Serve in bowls topped with mozzarella and ricotta.
