Filipino festive dish of thin rice noodles stir-fried with chicken, shrimp, carrots, cabbage and soy sauce. Served with lime wedges and essential at Filipino celebrations.

Ingredients

  • 250 g rice noodles (bihon), soaked and drained
  • 200 g chicken breast, sliced
  • 150 g shrimp (optional)
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 2 carrots, julienned
  • 200 g cabbage, shredded
  • 100 g green beans, cut
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce
  • 200 ml chicken stock
  • Cooking oil
  • Lime to serve

Method

    Stir-fry onion and garlic in oil. Add chicken (and shrimp) and cook until done.

    Add vegetables and stir-fry until crisp-tender. Pour in soy sauce, fish sauce and stock.

    Add noodles and toss until liquid is absorbed and noodles are soft.

    Serve with lime wedges.
