Cold Japanese soba noodle salad with cucumber, carrot, scallions and a sesame-soy dressing with ginger. Fresh, filling and perfect for spring and summer.

Ingredients

  • 250 g soba noodles
  • 1 cucumber, julienned
  • 2 carrots, julienned
  • 3 scallions, sliced
  • 2 tbsp sesame seeds
  • Dressing: 3 tbsp soy sauce, 2 tbsp rice vinegar, 1 tbsp sesame oil, 1 tsp sugar, 1 tsp grated ginger, 1 garlic clove (minced)

    Cook soba noodles per package. Rinse in cold water and drain.

    Whisk all dressing ingredients together.

    Toss noodles with cucumber, carrot and scallions. Pour dressing over and toss.
