A warming and creamy white chili made with chicken, white beans, and green chilies. Perfect comfort food.
Ingredients
- 500 g minced chicken or diced chicken fillet
- 1 yellow onion, chopped
- 2 garlic cloves, chopped
- 1 tbsp olive oil
- 1 tbsp cumin
- 1 tsp dried oregano
- 1 can (400 g) white beans, rinsed
- 1 small can (100 g) mild green chilies, chopped
- 8 dl chicken stock
- 1 dl sour cream or cream cheese
- Salt and pepper
- Fresh cilantro, lime, and shredded cheese for serving
Method
- 1Heat oil in a large pot and brown the chicken with onion and garlic until cooked through.
- 2Add cumin and oregano, and sauté for 1 minute.
- 3Stir in white beans, green chilies, and chicken stock. Bring to a boil.
- 4Reduce heat and simmer for 15-20 minutes.
- 5Stir in sour cream or cream cheese and heat through (do not boil).
- 6Season with salt and pepper. Serve with cilantro, lime, and cheese.
