White Chicken Chili

A warming and creamy white chili made with chicken, white beans, and green chilies. Perfect comfort food.

Ingredients

  • 500 g minced chicken or diced chicken fillet
  • 1 yellow onion, chopped
  • 2 garlic cloves, chopped
  • 1 tbsp olive oil
  • 1 tbsp cumin
  • 1 tsp dried oregano
  • 1 can (400 g) white beans, rinsed
  • 1 small can (100 g) mild green chilies, chopped
  • 8 dl chicken stock
  • 1 dl sour cream or cream cheese
  • Salt and pepper
  • Fresh cilantro, lime, and shredded cheese for serving

Method

  1. 1Heat oil in a large pot and brown the chicken with onion and garlic until cooked through.
  2. 2Add cumin and oregano, and sauté for 1 minute.
  3. 3Stir in white beans, green chilies, and chicken stock. Bring to a boil.
  4. 4Reduce heat and simmer for 15-20 minutes.
  5. 5Stir in sour cream or cream cheese and heat through (do not boil).
  6. 6Season with salt and pepper. Serve with cilantro, lime, and cheese.
