Moist banana cake made with very ripe bananas, cinnamon and vanilla. A perfect way to use up overripe bananas.

Ingredients

  • 3 ripe bananas (about 300 g peeled)
  • 150 g butter, melted
  • 1.5 dl caster sugar
  • 2 eggs
  • 2 tsp vanilla sugar
  • 2 dl plain flour
  • 1 tsp baking powder
  • 0.5 tsp cinnamon
  • 1 pinch salt

Method

    Preheat the oven to 175 °C. Grease and flour a loaf tin (about 1.5 litres).

    Roughly mash the bananas with a fork. Mix in melted butter, sugar, eggs and vanilla sugar.

    Combine flour, baking powder, cinnamon and salt. Fold into the banana mixture until just combined.

    Pour into the tin. Bake for 50–60 minutes until a skewer comes out clean.

    Cool in the tin for 10 minutes, then turn out onto a rack. Serve in slices, ideally with a spread of butter.
