Classic Swedish potato and anchovy gratin with onion, cream and sprats. An indispensable dish on the Christmas table.

Ingredients

  • 1 kg potatoes, peeled and cut into matchsticks
  • 2 yellow onions, thinly sliced
  • 1 can (125 g) pickled Swedish sprats (ansjovis)
  • 3 dl whipping cream
  • 1 dl milk
  • 2 tbsp butter
  • Salt and white pepper

Method

    Preheat the oven to 200 °C. Grease a baking dish.
  2. 2
    Fry the sliced onions in butter over low heat until soft and lightly golden, about 10 minutes.
  3. 3
    Layer potato matchsticks, fried onion and anchovy pieces in the dish, starting and ending with potato. Pour over the liquid from the anchovy tin.

    Mix cream and milk and pour evenly over the gratin. Season lightly with white pepper (the anchovies are already salty).

    Bake for about 45 minutes until the potato is cooked through and the top is golden and gratinated. Serve hot.
